It depends on what you need the server for. If you are going to need a GUI, just use a standard distro and add server packages to it. If you don’t need a GUI use a specialized server distro such as Ubuntu Server Edition.

I would define most server-oriented distros as “small size.” Ubuntu Server, for instance, only requires about 500 MB for a base install. Debian can be customized for similar requirements with the “netinstall” CD. Again, Fedora would be about the same size after installing the packages necessary for a server.
